Stainless warps more than other steels, so you really have to think about
how you fit your piece together. Also, many jobs have to have shielding gas
flowed on both the front side (where you weld) and also the back side. This
can apply for tubing too. Some people call this "backpurging".
There's a whole lot of theory about welding stainless. That's all I'm going
to mention right now.
